
Freezer Friendly breakfast sandwiches
I know it is unrealistic for everyone to have green smoothies for breakfast. I think eating right is all about finding what works for you; something that is realistic in you lifestyle so it is not just a short-lived diet. I know how common it is to run through the drive-thru in the morning. These freezer friendly breakfast sandwiches are a healthier version of a fast food sandwich. I was even able to use some organic ingredients which I am sure you are not getting when you eat fast food.
Egg, Turkey Sausage, and Cheese Bagel
Yields 12
Ingredients:
12 mini whole wheat bagels
12 slices of cheese
12 pre-cooked turkey sausage patties
12 eggs
Instructions:
1) Preheat oven to 350 degrees. Cook the eggs in a greased muffin tin for about 10-12 minutes. I left mine a little runny so they can fully cook in the microwave later without getting rubbery.
2) While the eggs were cooking, I organized the sandwiches.
3) Add your eggs.
4) And wrap. Freeze them for a quick breakfast.
5) To heat, I microwave on defrost for 1 min, then I took the egg out and heated that for another 30 sec, then put it back together for another 15.
A few alternative ideas:
scramble the eggs and add veggies before cooking them in the oven
use english muffins or other whole wheat breads
