These are quick and easy family friendly recipes we got from our Mom’s Night Out!
Chicken Parmesan, Noodle & Co. Style
Prep Time: 1 hour
8 boneless, skinless chicken breast pieces (usually 2 large breasts cut in 4s)
2 tbl vegetable oil
½ cup fine bread crumbs
½ cup grated parmesan cheese
¼ tsp. garlic salt
1 tsp. italian seasoning
4 handfuls of egg noodles
¼ tsp ground pepper
1 tbl butter, softened
1 tsp minced fresh parsley (or ¼ tsp dried)
1 tsp garlic powder
OPTIONAL: ¼ cup shredded parmesan
4 cups water
2 tbl sugar or honey
2 tbl salt
Brine the chicken:
Combine water, sugar (or honey), and salt in a large bowl.
Add chicken, making sure it is covered by the brine mixture.
Cover and refrigerate for ½ hour, up to 2 hours (NO LONGER!)
Cook the chicken:
Pre-heat oil in a non stick skillet over medium-high heat
Combine bread crumbs, grated cheese, garlic salt and italian seasoning in a shallow dish
Remove chicken from the brine and leave wet.
Press chicken into the crumb mixture until well coated.
Add to hot skillet, cooking 3 – 5 minutes per side until browned.
Cover, reduce heat to medium, and continue to cook the chicken until juices run clear.
Cook the noodles according to package directions.
Drain, toss with pepper, butter, parsley, garlic powder.
Slice the chicken and serve on top of the noodles with optional shredded parmesan
