6 large Idaho Potatoes

1/4 cup all purpose flour

1/4 cup grated Parmesan cheese

3/4 teaspoon salt

1/8 teaspoon pepper

1/3 cup butter or margarine

Chopped Parsley


-Pare potatoes and cut into quarters lengthwise. Combine flour, cheese salt and pepper in a paper bag. Moisten potato slices in water. Shake a few potatoes at a time in a bag to coat the potatoes well with the cheese-flour mixture.

-Melt the butter in a 9×13 baking dish. Place potatoes in single layer in dish. Bake in oven at 375 degrees for 1 hour turning once halfway through baking. When golden brown remove from the oven and sprinkle with parsley
